Sustainability If we are to discuss sustainability in our hospitality businesses, we must first define the concept. Sustainability entails the judicious utilization of resources to ensure long-term viability. Therefore, from the three pillars— Ecological, Social, and Economic —we prioritize ecological resources: natural resources such as water, land, air, and energy; social resources: human effort, expertise, and capabilities; and economic resources: time, capital, commodities, and services. Consequently, the congruence of the various factors in the environments in which we operate, which are influenced to a greater or lesser extent by our actions, is paramount. What constitutes ideality? How does sustainability manifest? It arises from how these factors converge to facilitate the progress of human activities that minimize resource utilization and waste.
